This weeks IFISH Recipe from Episode 9 on Channel 10:

SALMON WITH EGGPLANT & ROCKET SALAD

INGREDIENTS

• FILLETED SALMON
• SALAD INGREDIENTS
• ROCKET
• RED ONION
• SEMI DRIED TOMATO
• AUSTRALIAN FETTA
• SALTED EGGPLANT

METHOD

1. Place salad ingredients in a bowl and toss.
2. Lay salad on a plate.
3. Cook Salmon until there is a spring in the flesh. As you would a medium steak.
4. Cook the Eggplant for same period of time.
5. Lay Eggplant and Salmon on salad and serve.
